Put the first layer of cake right side up on cake plate. Using your Over the Top icing spatula, spread a generous layer of icing on cake.

Put the next cake layer upside down on top of the first layer, tops together. Spread icing on the top of the cake. It’s ok to let the icing go over the edge. You’ll use that on the side.

Add a generous amount of icing to your spatula and start icing the sides, holding the spatula vertically. Spreading it as evenly as you can, turn the plate as you go for smoother icing.

To get a flat edge on the top of the cake, clean the icing spatula and skim along the icing seam. Slowly begin to rotate the cake plate while skimming the spatula along the edge to smooth the top.

OTHER CLEVER CAKE TIPS:
SMOOTHING ICING

For smooth icing, ice cake and let icing set (form a dry crust). Lay a white non-textured paper towel gently on cake and hold in place. Using your fingers or fondant smoother, rub over towel with light pressure.

Lift paper towel and repeat over entire cake until smooth.

SWIRLING ICING

Before icing sets, make swirls using the back of a spoon to create soft waves.

Repeat swirling technique over top of cake until you have the desired effect. If desired, swirl sides of cake as well.
